Brown Sugar Garlic Oven Baked Pork Chops

  • 2 pounds Yukon gold potatoes cut into 1 inch cubes
  • 3 tablespoons canola oil
  • 4 bone-in pork loin chops
  • 2 tablespoons garlic minced
  • 1/2 cup brown sugar packed
  • 3/4 teaspoon salt 
  • 1/2 teaspoon ground black pepper


  1. Preheat the oven to 375 degrees.
  2. In a large bowl, coat the potatoes in the oil, 1/2 teaspoon Kosher salt and 1/4 teaspoon black pepper and spread onto half the sheet pan.
  3. In the same bowl, cover the pork chops with the garlic, brown sugar and the rest of the salt and pepper.
  4. Add the chops to the sheet pan.
  5. Cover with the remaining topping.
  6. Cook for 30-35 minutes or until the pork is at 145 degrees or more.
  7. Let rest for 3-5 minutes before serving.
